The ingredients needed to make Beer Boiled Brisket:
- Prepare Big Big slow cooker/crockpot
- Take Rolled beef brisket (Plenty of fat)
- Get Ale/Beer (Own choice, any works well)
- Take Garlic (minced)
- Make ready Celery
- Get Leek (Washed, trimmed and chopped into chunks)
- Get Enough chopped Carrot & Swede to squeeze around the beef
- Take Salt & Pepper to taste
Steps to make Beer Boiled Brisket:
- Gently heat a nice glug of oil in a pan, add garlic and soften
- Brown all sides of the brisket in the pan with oil and garlic. Then set brisket aside
- Using the same pan fry off the leeks & celery a little, then scrape all stuff from the pan into your slow cooker
- Place brisket on top of the leeks etc and add salt and pepper to taste. Stuff chopped carrots & swede around the beef (don't over stuff)
- Slighty heat your beer on the hob then pour into the slow cooker, you want your beer to cover the beef. If it doesn't cover then just add some boiled water til its covered.
- Set slow cooker to high and leave for an hour. After an hour turn down to low and leave.
- Just a little note, when I make the brisket I tend to get it cooking on low for around 10pm the night before your serving it. That Way it can have a good 10 hours cooking. As I usually serve this for Sunday Lunch.
- Next morning, you'll wake to a beautiful smell!! Take the brisket & Veg etc out and set aside.
- Take all the liquid from the cooker , add to a pan and bring to a boil. Basically make a nice gravy. You can use gravy granules, gravy powder or attempt to make your own.
- Now you have a choice. You can either cut the string round the beef, get 2 forks and pull the beef apart then put it all back in the slow cooker and serve as a stew. Or weight the beef so you can then slice. Note : there isn't much chance of slicing this as it is for lunch, you take a knife to it & it'll just crumble!
